Marinated Roasted Mushrooms with Goat Cheese Mousseline

Ingredients:

Medium mushrooms caps 40 each

Marinade:

Canola and Olive oil blend 1 cup

Whole grain mustard 1 tablespoon

Sherry vinegar ½ cup

Shallots, finely chopped 2 each

Garlic cloves, chopped 2 each

Salt and pepper To Taste

Fine herbes ½ tablespoons

Filling:

Goat cheese 10 ounces

Cream cheese (optional) 5 ounces

Gruyère cheese shredded 8 ounces

Eggs 2 each

Heavy cream As needed

Fine herbes 1 tablespoon

Honey 1 tablespoon

Salt To taste

Pepper To taste

Ginger, ground To taste
