Basil Pesto

Toast 1/3 cup pine nuts in a dry skillet; let cool. Pulse in a food processor until finely ground. Add 3 cups basil, 1 clove garlic and 1/4 teaspoon, kosher salt; pulse until finely chopped. Add 1/2 cup grated parmesan; pulse to combine. Slowly pulse in 1/2 cup olive oil.

Cilantro Pesto

Toast 1/3 cup pepitas in a dry skillet; let cool. Pulse in a food processor until finely ground. Add 3 cups cilantro, 1/2 teaspoon orange zest, 1 clove garlic and 1/4 teaspoon kosher salt; pulse pulse until finely chopped. Add 1/2 cup grated aged gouda; pulse to combine. Slowly pulse in 1/2 cup olive oil.

Mint Pesto

Toast 1/3 cup sunflower seeds; let cool. Pulse in a food processor until finely ground. Add 3 cups mint, 1 teaspoon chopped rosemary and 1/4 teaspoon kosher salt; pulse until finely chopped. Add 1/2 cup grated pecorino; pulse to combine. Slowly pulse in 1/2 cup olive oil.
