Keep it Green

Summer in a bowl is what I like to call this next dish! So easy to make, yet still full of flavor & keeps you refreshed & wanting more. Yes i know what you’re thinking, pasta is heavy and filling. But no, with the fresh vegetables & lime juice this pasta dish leaves your mouth watery and wanting another bowl. The fresh ingredients keep it vibrant & full of that summer vibe we all crave and want year round. Make this in a bigger quantity for a party or keep it simple with just a pound of pasta and have the family over. Personally, feel free to top this with some fresh parmesan cheese & a glass of Pinot!

Ingredients:

1 lb. spaghetti

6 spears fresh asparagus (trimmed)

1 fresh ear of corn (roasted)

1 can chickpeas (washed)

handful of fresh spinach (sautéed)

half red onion (thinly sliced)

2 limes (juiced/zested)

4 fresh garlic cloves

1/4 cup of olive oil

1/4 teaspoon of salt

1/4 teaspoon of ground black pepper
