Fall time is here & you know what that means, pumpkin spice lattes, pancakes, seeds, pumpkin spice cookies, & well everything else you think you can add pumpkin flavor to! Personally this year there’s more pumpkin flavor food than ever before!

Pumpkin Recipes Anyone?

Curried Pumpkin and Peas

Total Time: 45 Mins / Serves: 6

Ingredients:

  • 2 tbsp. unsalted butter
  • 1 medium onion
  • 1 garlic clove
  • 2½ tsp. curry powder
  • ½ tsp. salt
  • ½ tsp. Freshly ground pepper
  • 2 lb. pumpkin
  • 2 medium red potatoes
  • 1½ c. chicken broth
  • ¾ c. golden raisins (optional)
  • ¾ c. frozen baby peas
  • fresh cilantro

 

Chef’s Notes: Feel this dish isn’t filling enough? Lay your curry pumpkin over a bed of white rice for that comfort food feeling.

Directions:

Heat butter in a large pan over medium-high heat, add onion, and cook until golden-brown, about 5 minutes. Add garlic and cook 1 minute more. Stir in curry powder, salt, and pepper. Add pumpkin and potatoes and cook for 5 minutes, stirring frequently. Pour in broth and raisins(optional), cover, and reduce heat to medium. After 15 minutes, add peas. Replace cover and continue to cook until pumpkin and potatoes are tender, 5 to 10 minutes more. Garnish with cilantro.

A Classic … 

Pumpkin Bread

Total Time: 1 hr 20 mins. / Yield: 2 loaves/16 slices

Ingredients

  • 2 stick unsalted butter
  • 2½ c. all-purpose flour
  • 1 c. light-brown sugar
  • 1 c. granulated sugar
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 2 tsp. cinnamon
  • ¾ tsp. ground cloves
  • 2 c. grated pumpkin (use a small-holed grater)
  • 3 large eggs
  • ½ c. Buttermilk
  • 1½ tsp. vanilla extract

Chef’s Notes: For extra flavor and fun, feel free to add chocolate chips, walnuts (any nut you prefer) or even raisins! Also, make a twist on a classic bread, add cream cheese to either the bread itself or serve on the side!

Directions:

  1. Preheat oven to 350°F. Butter and flour two 9- by 5-inch loaf pans or two 8-inch cake pans and set aside.
  2. Combine flour, sugars, baking powder, baking soda, and spices in a large bowl. Add grated pumpkin and toss.
  3. Whisk eggs, buttermilk, butter, and vanilla in a medium bowl and stir into dry ingredients.
  4. Transfer to prepared pans and bake on middle shelf of oven until a wooden skewer inserted into center of bread tests clean, about 35 minutes. Cool in pans on a wire rack. Finally, run a knife around edges to easily release the bread from the pans.
