Vanilla Cake

Serving Size: 12 / Prep Time: 15 min / Easy

Ingredients:

  • 1 cup white sugar
  • 1/2 cup salted butter
  • 2 eggs
  • 2 tsp vanilla
  • 1 1/2 cups all-purpose flour
  • 1 3/4 tsp baking powder
  • 1/2 cup whole milk

Directions:

Preheat your oven to 350 degrees. Start by creaming the butter and sugar together in a bowl. Add the eggs one at a time and follow that by adding your vanilla extract. Combine your dry ingredients in a bowl. Slowly add to wet, mixing on medium speed. Alternate this by adding milk and dry ingredients to create your batter. Finally, bake for 30-40 minutes. Makes one 10-inch cake.

Chocolate Cake

Serving Size: 12 / Prep Time: 15 min / Easy

Ingredients:

  • 2 cups all-purpose flour
  • 2 cups sugar
  • 3/4 cups unsweetened cocoa powder
  • 1 1/2 tsp baking soda
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 tsp espresso powder
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup boiling water

Directions

  • Preheat your oven to 350 degrees. Start by combining your dry ingredients in a large mixing bowl. Next, add milk, oil, eggs and vanilla extract to your dry mixture and combine on a medium setting. Add boiling water to the mixture and beat on high for one minute. (Careful!) Let this cake mixture then cook for 30-35 minutes, following by cooling for 10 minutes before removing from cake pans.

 Butter Cream Frosting

Ingredients:

  • 2 sticks of butter
  • 3 tbsp heavy cream
  • Almond extract
  • 2 tsp Clear Vanilla extract
  • 4 cups powdered sugar

Directions:

  • To start, mix 2 sticks of butter and 3 tbsp of heavy cream until peaks form. Next, add a splash of almond extract and 2 tsp clear vanilla extract. Beat this mixture on a medium setting. Finally, add powdered sugar to desired sweetness. I tend to use 4 cups in the end.

*For the sunflower toppings on the cupcakes, I used sunflower sugar candies which I purchased off of, It’s All Sweet on Esty.com!

Enjoy!
