Southwest Pasta for Lunch

Couldn’t decide what I was in the mood for today for lunch. Began researching quick and easy pasta dishes & found a different version of a Southwest Pasta dish. Decided to put my own twist on it! Didn’t have to go food shopping for this recipe. Everything I needed was either in my fridge or pantry already! Can’t get any easier than that!

What you’ll need …

Ingredients:

  • 1/2 lb. Farfalle Barilla Pasta
  • 1 Green Pepper (Thinly Sliced)
  • 2 Cloves Garlic
  • Half Red Onion (Thinly Sliced)
  • 1 Avocado
  • 3 Plum Tomatoes
  • 2 Lemons
  • GOOD Olive Oil
  • Chili Powder
  • Salt
  • Black Pepper
  • Black Beans (Half Can)
  • Red Kidney Beans (Half Can)
  • Fresh Parsley
  • Pineapple (Sliced)

Chef Notes: Normally this recipe calls for limes, however I only had lemons, so I simply substituted that ingredient.
