Vegetable of the Month

We apologize for this late post … but you’re also welcome for these next two back to back Vegetable of the Months! For April, our Vegetable of the Month, is Carrots! Carrots are a root vegetable, also know as the perfect health food. Personally growing up this was always my least favorite vegetable to eat. Probably  because I was only ever given steamed carrots. For tonight’s dinner, I decided to work outside of my comfort zone & switch it up with some Roasted Carrots. Probably the easiest thing to make, next to cereal of course!


Did you know?

  • Carrots are a particularly good source of beta-carotene, fiber, vitamin K, potassium and antioxidants.
  • They are a weight loss friendly food and have been linked to lower cholesterol levels and improved eye health.
  • The carotene antioxidants in them have also been linked to reduced risk of cancer.
  • Carrots contain very little fat and protein

Roasted Carrots

  • 8 Carrots (peeled)
  • Good Olive Oil
  • 1 White Onion
  • 1 Sprig Rosemary
  • 2 Garlic Cloves
  • Garlic Powder
  • Pinch of Nutmeg (optional)
  • Freshly Ground Black Pepper
