Grilled Pineapple Tomatillo Salsa

We’re whipping up a refreshing Grilled Pineapple Tomatillo Salsa. Don’t get nervous when you hear the ingredient tomatillo! These days they’re found in almost any supermarket so don’t let it stop you from making this recipe.

Did you know tomatillos are also known as the mexican husk tomato. They look very similar to any regular tomatoes, however they’re just green. So don’t mistake them for tomatoes that aren’t ripe yet! Tomatillos are usually eaten raw.
What you’ll need …
1/2 each – Fresh Pineapples
6-8 each – Tomatillos
Olive Oil (as needed)
2-3 tbsp. – Red Onion (finely sliced)
1-2 tbsp. – Jalapeno (thinly sliced)
2-3 tbsp. – Fresh Cilantro (finely chopped)
2-3 tsp. – Fresh Squeezed Lime Juice
Kosher Salt (To Taste)
Fresh Ground Pepper (To Taste)
Chef Notes: For the tomatillos, simply remove the husk and briefly wash in warm water. Brush tomatillos in oil, salt and pepper and roast until brown and blistered.
