The Catch of the Day

Before heading over to a clients home earlier today, I decided to stop by one of my favorite butchers for the some fresh Salmon to later sear to perfection. Walking into the shop I already knew what I was looking for. However for the side dishes, well let’s just say I decided on those last-minute. Enough talking, let’s dive right into tonight’s dinner now shall we?

What you’ll need


  • 4 filets fresh salmon
  • 3 lemons
  • fresh thyme
  • parsley
  • 4 cloves of garlic
  • 3 peaches
  • 1 lb purple potatoes
  • 1 bunch broccoli rabe
  • Olive oil
  • Salt (to taste)
  • Fresh Ground Pepper (to taste)


Chef Notes: 

It’s all about the sides. For the purple rustic potatoes I simply just half-mashed them with some garlic powder, freshly ground black pepper & milk (your choice). To finish, I topped the seared salmon with a small bunch of broccoli rabe that was seared in good olive oil and thinly sliced garlic. Just for something sweet and refreshing, I simply just thinly sliced a fresh peach from the farmers market. Time to dig in!
