Chicken Noodle Soup


Summer’s officially over, so you know what that means … it’s soup season! Why not start off with the classic Chicken Noodle Soup? Oh, and there’s no boxed chicken stock in this recipe if that’s what you’re wondering already. This recipe will bring you right back to nanny’s kitchen when you were a kid. Let’s get started …


Makes: 10 Servings / Prep: 20 mins / Cook : 60 mins +

Ingredients:

(For Soup)

  • 2-1/2 pounds bone-in chicken thighs
  • 1-1/4 teaspoons pepper, divided
  • 1/2 teaspoon salt
  • 1 tablespoon canola oil
  • 1 large onion, chopped
  • 1 garlic clove, minced
  • 10 cups chicken broth
  • 4 celery ribs, chopped
  • 4 medium carrots, chopped
  • 2 bay leaves
  • 1 teaspoon minced fresh thyme or 1/4 teaspoon dried thyme
  • 3 cups uncooked kluski or other egg noodles (about 8 ounces)
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon lemon juice

Makes: 3 1/2 Quarts / Prep: 15 mins / Cook: 4 Hours

(For Broth)

  • 1 (4-pound) chicken, whole

  • 1 medium onion, peeled and quartered

  • 3 medium carrots, quartered,

  • 3 stalks celery, quartered

  • 1 leek, dark tops only (optional)

  • 1 medium parsnip, peeled and quartered optional)

  • 3 generous sprigs fresh thyme or 1 teaspoon dried

  • 3 generous sprigs flat-leaf parsley

  • 5 whole black peppercorns

  • 3 bay leafs

  • 4 quarts water (about)


Chef Notes: 

Keep chicken breast whole while cooking. Once the chicken is cooked all the way through, you can than shred the chicken using two forks to pull apart the meat. Finally adding the chicken back to the broth with the noodles of your choice. Don’t forget to salt the stock last for flavor.
